Gaufres de Liège or waffles, waffles, waffles!

I'm fueled by cupcakes, but today's recipe is a Belgian waffle recipe called Gaufres de Liège!



The shopping list for 10-12 waffles:


For the batter:

1 1/3 cups (160 grams) wheat flour
4 eggs
1 cup ( 200 grams) cream
clove powder
cinnamon powder
anise powder
1/8 cup (20 grams) vanilla sugar
1/4 cup (60 grams) butter
1/4 cup (40 grams) sugar
salt
butter to grease the waffle maker


For the garnish:


1 cup (200 grams) cream
1/8 cup (40 grams) vanilla sugar
1/3 cup (40 grams) confectioner's sugar


If you can't buy vanilla sugar, there's an easy way to make it! All you have to do is combine white sugar with vanilla bean pieces! The vanilla sugar tastes even better, if you let it rest for a few weeks.


Okay, let's get started!




In a large bowl combine flour, egg yolk, cream, a pinch of each spice and vanilla sugar. Give egg white into a shaker.


Then melt the butter in a small pan, add melted butter to flour mixture and whisk well.


Add 1/8 cup (20 grams) and a pinch of salt to egg white and beat with hand mixer until stiff. Then add another 1/8 cup (20 grams) sugar and beat for 2 more minutes.


Give stiff egg white into large bowl with flour/cream mixture and carefully fold in.


Preheat and grease waffle maker. When hot, give 2-3 tbsp batter into waffle maker and bake waffle at medium heat.




Add 1/8 cup (40 grams) vanilla sugar to cream and whip with handmixer.


Place waffle on a plate, add cream topping and dredge with confectioner's sugar.

Fizzy Cherry Coke cakes

Today's recipe is a simple recipe for yummy Cherry Coke cupcakes! The recipe yields 15 cupcakes.

First, let me introduce my little assistant to you. His name is Fredi @F_R_E_D_I and he and his 3 brothers have been living with my lady person for a few years now. His interests are the TV, pizza and Green Day. He applied to become my assistant and I hired him. Let's see, if I did the right thing...

Now, we have to put the ingredients to our shopping list.

For the cupcakes:
2 3/4 cups (340 grams) wheat flour
2 1/2 tsp baking powder
1/2 cup (50 grams) oat flakes
1/3 cup (80 ml) vegetable oil
2 eggs
1/2 cup (120 grams) sugar
1 cup ( 250 ml) Cherry Coke

For the icing:
1 1lb (250 grams) package confectioner's sugar
3-4 tbsp Cherry Coke

Optional garnish:
30 Haribo Gummi Cherry Cola bottles


When back home from shopping, preheat the oven to 375 °F (190 °C, gas mark 5).
Then whisk together flour, baking powder and oat flakes in medium bowl.
In a large bowl combine vegetable oil, eggs, sugar and Cherry Coke.
Fold the flour mixture into the Cherry Coke mixture. Batter will be creamy.
Fill muffin cups 3/4 full with batter.
Bake 20 - 25 minutes and then cool completely.

For the icing pour 3 tbsp Cherry Coke into medium bowl and gradually beat in confectioner's sugar until creamy. If necessary, add one more tbsp Cherry Coke.

Spread icing on cupcakes and place 2 Haribo Gummi Cherry Cola bottles a top each muffin.

Bringing on the cookies!

First of all, let me introduce myself to you. My name is Leopold and my nickname is Poldi. I was supposed to become mascot for the Olympic summer games 2012 to be held in Leipzig. But unfortunately my hometown was not voted Olympic city and BANG, I found myself as one of the unemployed! But not enough with that, someone grabbed me, threw me into a truck and drove me to a dime store in Cologne! A dime store! What a shame! First being booted out as a mascot and then being sold off at that store! I felt worthless! Absolutely worthless! But I decided not to give up, placed myself into the window and shouted for someone to take me home - day and night (but for some reason, no one came across the store at night time!). After a few days, someone picked me up and brought me to my new home here in Cologne! Now I'm living with a guinea pig, whose addicted to attention - all the attention, a young lady and some other stuffed pals.




My life became very lazy and I started to like being unemployed and watch TV all day long! But when my lady person ruined her Christmas dinner, I decided to try cooking and baking too. And guess what - I'm a genius in cupcakes! I started this blog to share my passion for cupcakes with those of you who are interested, everyone who's afraid of gaining weight - better leave now!



The first recipe I want to bring on is an Oreo cupcakes recipe! It is an American recipe, so if you want to try it out and you're American, you're on the safe side! For everybody else, who is used to the metric system and cooking and baking with grams and litres, I tried to convert the volumes and it worked out for me... though I'm not quite sure, if I converted everything absolutely correct!




The recipe yields 15 cupcakes!




For the cupcakes:
15 Oreos, one side twisted off
2/3 cup (150 grams) sugar
1 2/3 cups (200 grams) all-purpose-flour, or whole-wheat-flour, for those of you who don't have all-purpose-flour, like me, since it's not known in Germany!
3/8 cup (50 grams) baking cocoa
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 eggs
1/2 cup ( 125 ml) milk
1/4 cup (60 ml) oil
1 tsp vanilla extract




For the frosting:
1/2 cup (100 grams) vegetable shortening
1/4 cup ( 60 ml) warm water
1 1 lb (250 grams) package confectioner's sugar
1 tsp vanilla extract
1/2 cup (80 grams) Oreo crumbs made from reserved sides and additional cookies
15 split Oreos




Preheat oven to 350°F (175°C, gas 4)
Place one Oreo with cream side up in each muffin cup.
Stir together sugar, flour, cocoa, baking powder, baking soda and salt in medium bowl.
In a large bowl combine eggs, milk, oil and vanilla extract and stir until well blended.
Add flour mixture to large bowl and beat on medium speed for 2 minutes.
Fill each muffin cup 3/4 full with batter and bake 20 - 25 minutes.




For the frosting beat vegetable shortening and warm water together.
Add vanilla extract.
Then gradually beat in confectioner's sugar until frosting is creamy.




Spread frosting on completely cooled cupcakes and place 15 split Oreos a top frosted cupcakes.
